Trying to mix it up












My Meal Plan:

Saturday - Fish, fries and coleslaw
Sunday - Baked chicken - NEW recipe! spinach and rice
Monday - Potato Soup and corn bread
Tuesday - Ravioli, salad and yeast rolls
Wednesday - Turkey enchiladas and ranch style beans (I'm substituting ground turkey for beef)
Thursday - Easy chicken and dumplins
Friday - Out to eat
Saturday - C.O.R.N. (clean out refridgerator night)

busy week menu



With a busy week ahead I quickly look to the Org Junkie to provide me with some much needed inspiration.  She never seems to let me down!  This weeks menu is based around her suggestion of some of our families favorite recipes, simply because they are easy and good!  So here goes, this week we'll be having:

Sunday - Meatballs and mashed potatoes
Monday - breaded chicken sandwiches, celery and carrot sticks with ranch
Tuesday - Tortellini 
Wednesday - Taco Salad *family recipe below
Thursday - Soup and cold cut sandwiches
Friday - Out to eat

some leftover ideas


 

Last week plans for the dinners I had were rearranged and moved about and some weren't used at all.  So as I journey forth to make this week's menu I plan to include a few of the items from last week.  I do hope that this will allow for a smaller grocery bill as well!  


Sunday - Spaghetti
Monday -Asparagus Couscous and green beans
Tuesday - Leftover taco soup
Wednesday -  Grilled chicken sandwiches, hummus and chips
Thursday - Kaitie's choice: mac-n-cheese with hot dogs and salad 
Friday - Church book club meeting, lots of yummy finger foods!
Saturday - Breakfast for dinner, scrambled eggs, biscuits, bacon and fruit

All of the recipes are the same from last week. My highlight recipe of the week is Stir-fry! It was really fantastic!!!! The family was very impressed and even ate leftovers the next day for lunch - if you know my crew you know that's saying a lot.  I hope you all have a terrific week.  





I have began reading The Shack.  While I haven't gotten to the end yet, I have to say it has been a wonderful book.  I will be honest, as the mother of an 8 year old daughter there were some chapters that were VERY hard to get through, but after a bit of crying and heart-break for the author I have found that I am in love with the way the author portrays a relationship with God!!! I plan to finish the book this week and will post a final review of it to let you all know if it's end is as wonderful as it's middle.

Seeking healthy choices after the holiday!

Thirty weeks into this pregnancy and holiday heavy along with 15 extra pounds from baby and I'm in desparate need of a healthier menu!!! Today's headlines talk of diet and cutting back, but all I really need are some healthier alternatives!!  Hoping to find some inspiration I ventured to my favorite meal plan site www.orgjunkie.com and was not let down.  It is amazing to me that even during the previous week of Christmas dinners and out to eating galore there are some die-hard meal planners with a mission of health!  Armed with a fantastic new website Plan to Eat recommended by the fabulous Org Junkie!!! I began to plan this weeks health conscience menu!  I hope you all have had a fantastic first part of 2010!


 



Saturday - Cheesy Potato and Corn Chowder with Cornbread


Sunday - Spaghetti and Turkey Meatballs with Ceasar Salad  

Monday - Left overs!

Tuesday - Chicken Stir Fry and Egg Rolls

Wednesday - Asparagus CousCous and Green beans

Thursday - Kaitlynn's choice: hot dogs, carrots and fruit

Friday - Taco soup and tortilla chips

Saturday - Grilled chicken and hummus sandwiches with chips

Highlight recipe of last week goes to: My Mom's chowder!  I hope that everyone has the chance to try out this recipe during these cold days of winter! A suggestion for those who like a thick chowder - boil your potatoes until fork tender before adding your other ingredients and cooking for the recommended time.  

Photos for the week: The first 3 are from last night, Kait and Daddy at bedtime, the next is Kaitie this morning - first day back to school after break! And then of course is the snow! If you don't already know, snow in Hope is a rare occurrence! The cat - Tiger Styx didn't quite know what to think of it.
