I am striving for a chance to become more like the Proverbs 31 wife and mother, most of the time I fall short, but there are moments with God's grace that I succeed!

Christmas week menu!
Merry Christmas week all!!!
This week will be a short one for original recipes and such because it's Christmas week! So that being said I will be doing a lot of cooking this week so the other days menus will be fairly easy to make and easy to clean up!
Monday - Tostadas and Spanish rice
Tuesday - Christmas Dinner at the Hooker's. I'll be making broccoli rice casserole and a triple layer chocolate cake.
Wednesday - hot dogs and carrots and ranch
Thursday - Christmas Eve Dinner at the Down's. I'll be making mashed potatoes and purple hull peas.
Friday - Merry CHRISTmas everyone! Christmas dinner at the Huckabee's. I'll be making mashed potatoes, green bean casserole, and pound cake.
Saturday - Out to eat with my side of the family - all that cooking is very tiring!
I wish you all a very merry Christmas and I'll see you back here next week for a New Year's menu plan!

12/13 - 12/19
One more week of school and she's out for 2 weeks!!! Needless to say my little Kait is very excited that Christmas is on it's way. This week is going to be a surprise for me as far as work goes, and I suppose that's the life of a substitute teacher. I have planned my meals accordingly, just in case I'm called in, all of these meals are easy!
Also, I didn't get around to making the swiss chicken casserole last week, so I'm going to give it a shot again this week. If you haven't had a chance to visit http://www.orgjunkie.com/ yet, you should make the time!!! It is a FANTASTIC life saver for house cleaning tips, organizing of course and the best Menu Plan Monday site on the web!
This weeks Menu:
Sunday - create your own nachos
Monday - Swiss Chicken Casserole (http://allrecipes.com/Recipe/Swiss-Chicken-Casserole-II/Detail.aspx) and salad

Christmas lights
We got to go look at a very nice lights display in Arkadelphia last night. It was COLD, but really enjoyable. Here are some pictures, and a new recipe review below the pics!
The recipe... Springy Shells
http://thepioneerwoman.com/tasty-kitchen/recipes/main-courses/springy-shells/
YUMMY! A keeper for sure. My suggestion would be to keep a careful watch while baking so that it doesn't get too dry... what a wonderful dish full of veggies!

Sunday Morning
Well it's been quite the busy week and weekend for my family and me. We have had some major issues with our wonderful daughter that are in a "work in progress" stage. (prayers would be appreciated) My part time job as a substitute teacher was busy the latter part of the week and as a result my full time job as homemaker has greatly suffered. I still haven't figured out how to balance the house with the outside job, and as we were out of town yesterday for a birthday party, my house is resembling a disaster area... I am happy to say that it is a quiet morning and I'm able to menu plan for the week and get some much needed chores done! So onto the fun stuff! Menu plan!! Thanks to http://orgjunkie.com/ I have found http://thepioneerwoman.com/cooking/ and some new recipes to try!!! And I should also mention that the creator of this site has a great wit and wonderful pictures to go along with her recipes so you should check it out if you haven't been there already!Monday: soup and grilled cheese sandwiches
Tuesday: Egg Florentine casserole (recipe found on thepioneerwoman.com)
Wednesday: Spring Shells (recipe found on thepioneerwoman.com)
Thursday: Swiss chicken casserole II (recipe found on allrecipes.com)
Friday: leftover buffet
I hope you all have a blessed week!

New to blogging
I am new to blogging so this may not be how it's done, but I'm going to give it a shot! I have recently decided that menu planning is the way to go, as it allows me to save time, money and energy both at home and at the store. All of this is greatly needed in every family, and my family is no exception! So for my first blog post I'm going to join the hundreds who have already started sharing their meal plans. However the holiday, work and class has me a bit off regular schedule and so instead of Monday meal planning I'm having to do Wednesday meal planning, but I will post what we've already had this week. I hope you all enjoy! If you like the idea of the menu plan you should check out Menu Plan Monday (MPM at http://orgjunkie.com/)
Monday: Turkey lasagna and salad
Tuesday: left overs!
Wednesday: Turkey and dressing casserole http://allrecipes.com/Recipe/Turkey-Stuffing-Divan/Detail.aspx and green beans
Thursday: pinto beans with ham and cornbread
Friday: taco salad, salsa and blue corn chips
